Quiche with fish

For the dough:

  • 225 g of flour
  • 120 g of butter
  • 10 g of sugar
  • 4 grams of salt
  • 60 ml of very cold water

Filling:

  • 200 g of red fish
  • 10 cherry tomatoes
  • 300 g of broccoli
  • 2 eggs
  • 100 g of cream
  • Salt, pepper, nutmeg
  • Cheese

Preparation:

  1. Prepare the dough. Sift the flour. Add salt, sugar and mix everything. Grate the butter on a large grater. Rub well with your hands.
  2. Add cold water and knead the dough.
  3. Put it under the film for 40 minutes in the refrigerator.
  4. Blanch the broccoli.
  5. Grate the cheese. Mix half with egg and cream. Cut the tomatoes in half.
  6. Put the dough in a mold and make holes. Place in the refrigerator for 15 minutes.
  7. Heat the oven to 200 degrees. We put parchment and cargo on the dough so that it covers the entire cake. (Peas, beans or rice). Bake the dough for 25 minutes at a temperature of 180 degrees.
  8. We take out the dough. We lay out fish, broccoli, tomatoes and grated cheese. Pour the filling on top.
